Mr. Schwartz and I had the most wonderful weekend. What did we do you ask? Well, we did whatever we wanted to!! No pressure and we loved it. Friday, we went over to my brother and sister (in law's) house to see the girls and played Monopoly....Mr. Schwartz killed us all. On Saturday my mom came down to help me paint our bedroom and Mr. Schwartz worked on stripping, sanding and staining our dresser. My sister called on Saturday evening and we went over for pizza and beer. We played with the girls on the porch and it was a perfect end of summer night.
Sunday we woke up ready to take on the world, cleaning, laundry, more staining and putting away things. What better way to start off a day like that than a puffy pancake. Have you heard of these things? There is a restaurant we went to a while ago called Pannekoeken that serves these puffy baked pancakes. We went there for the first time with four of my college girlfriends when I first moved down to the Twin Cities area. They come out of the kitchen saying "PANNNNEEKOOOEKEEEEN" because you have to eat them quickly or they will fall and everyone in the restaurant deserves to know when you order a pannekoeken. But really they are quite delish and very easy to make.
Give them a shot next weekend and you will be ready to take on the world.

Start by putting the butter into the bottom of your baking dish and pop it into the oven while it preheats. In the recipe, you can read it says use a 9 inch pie plate. Mine was MIA, no idea where I put it when I was unpacking. But I did find this adorable 9x9 pan my mom picked up for me. My grandma had a very similar one in her kitchen. I love using things (especially in the kitchen) that have history. Anyway, this 9x9 pan worked just fine!To start the pancakes, crack two eggs into a bowl.
Add the flour...
Milk....
And salt.
I thought a little nutmeg and cinnamon would also be pretty stinkin' tasty in this as well.
So I added a dash of each...beat this batter just until there are no lumps. The instructions say "be careful to not over beat, your pancake will not puff."
Here's the dish with the melted butter.
Pour the batter into the butter pan. It will look weird, don't stir it. It will all be okay.
30 minutes later, this golden beauty will come out of the oven. One side got a little outta hand but, that's okay. Mr. Schwartz didn't mind one bit.
Top your pancake with powdered sugar. Isn't this the most adorable little sifter!? It was given to me at my bridal shower by my sweet Auntie Carol Ann (the baker) and my cousin Elizabeth. Seriously the perfect tool for powdered sugar. Yep, here it is in all of its powered sugar glory.
Add a little syrup and a latte and this girl was set.
Mmmmm hummm....

Puffy Baked Pancakes
Ingredients
2 tbs butter
2 eggs
1/2 cup flour
1/2 cup milk
1/4 teaspoon salt
Dash of nutmeg and cinnamon
Powdered sugar (for dusting)
Maple syrup (for serving)
Preparation
Preheat the oven to 400 degrees.
Put the butter in the bottom of a pan--either 9in pie pan or 9x9 baking dish. Place pan into oven to melt the butter while you prepare the batter.
Combine the eggs, flour, milk, salt, nutmeg and cinnamon. Do not over mix this, just whisk until combined and there are no lumps.
Pour the batter into the pan with the melted butter. Do not mix.
Bake in the oven for about 30 minutes or until golden brown. Top with powdered sugar and serve with maple syrup immediately.
