Grilled Italian Potato Packets + A Giveaway (WINNER ANNOUNCED)

About a month ago, Simply Potatoes approached me to develop or try one of their recipes to accompany some type of grilled food.  I'm a huge fan of Simply Potatoes--truly they are the only hash browns our family buys.  But, I hadn't tried any of their other varieties.  I wanted to create a recipe that would be a. easy and b. wouldn't heat up the house.  

These Grilled Italian Potato Packets fit the bill.  Savory, cheesy and only four ingredients.  You really can't beat that.  Simply Potatoes has offered to give away a voucher so that a lucky reader can try this recipe, one of their own or a recipe from the Simply Potatoes website.  Scroll to the bottom of the post for the giveaway. 
 Start with these little guys.  Homestyle Slices, baby.
 Take them out of the bag and into a large bowl they go.
 A few drizzles of canola or vegetable or olive oil…whatever you have on hand.
 A packet of Italian Dressing seasoning.
 And a good grate of parmesan cheese.  Toss this together, that's it!
 Spray a sheet of aluminum foil

In the middle of the sheet, pile 1/4 of the potatoes. 
 Roll up the middle, and scrunch the ends so it creates a packet.  On to the grill they go for 15 minutes with the grill high, on the top wrack.  After 15 minutes, place them on the main wrack to crisp up a bit for about 5 minutes.
  That's all.  Perfectly seasoned and crispy potatoes.
These are going on our regular rotation.
 This is the bottom, Mr. Schwartz was smart enough to flip his. I told you they were crispy.
 The perfect grilled summer meal.

Grilled Italian Potato Packets
1 bag Simply Potatoes Homestyle Slices
2 tablespoons canola, vegetable or olive oil
1 packet Italian Dressing seasoning
1/2 cup grated parmesan cheese
Cooking spray

Preheat the grill on high.


Place the potatoes in a large bowl.  Drizzle with oil, sprinkle the Italian dressing seasoning and grate in the parmesan cheese.  Toss together so everything is evenly coated.


Take large rectangles of aluminum foil and spray a line of cooking spray on the middle.  Make sure you liberally spray this so the potatoes don't stick.  Place the potatoes on the line of cooking spray.  Take the middle of the aluminum foil and roll it up, scrunch the ends together to make the packet.

Place on the top wrack of the grill for 15 minutes on high.  After 15 minutes, move to the main wrack and cook for another 5 minutes.

Carefully remove the potatoes from the packets.  Caution, this will be very hot and the steam can burn you.  Plate and enjoy!
