Eggless Chocolate Chip Cookie Dough

Raise your hand if you don't like chocolate chip cookie dough.  I'm assuming you are not sitting there with your hand up so let's proceed.  

The other day I had a hankering for cookie dough.  No idea where it came from but it hit me hard.  Ever since I had a serious spell of food poisoning landing me in the hospital for a few days right before Spring Break, I have been pretty careful about not eating things with raw eggs.  Although I did loose a few lbs right before heading to Mexico, it wasn't exactly the diet plan I had in mind. 

Since then,  if you can believe it, I don't even sneak the smallest taste of anything with raw eggs.  Since I'm such a germaphobe no, I had to find a new way to get my cookie dough fix.  This is it and it is pretty close to the real deal.  Although it isn't as fluffy as the real deal, it tastes really good.  It makes the perfect amount to keep in your fridge when you need a little bite of sweetness.  
Start with a stick of butter that has been sitting at room temperature so it is easy to mix.
Add white sugar
And brown sugar
Stir to combine
Add a little milk
Flour
Salt
Add vanilla as well.  
Stir to combine, it will be nice and thick. 

Add the chocolate chips and stir until they are evenly distributed in the dough.

That's it, dig in!

Eggless Chocolate Chip Cookie Dough

1 stick of room temperature butter
1/4 cup white sugar
1/4 cup brown sugar
1 1/4 cups flour
1/8 teaspoon salt
1 tablespoon milk
1/2 teaspoon vanilla extract
2/3 cup chocolate chips

In a large bowl, combine the butter, white sugar, brown sugar, flour, salt, milk and vanilla.  Stir until everything is fully combined.  Mix in the chocolate chips.

Cracker Pizza

This will officially be my quickest post yet.  But, lucky for you, that means this is the easiest recipe to date as well.  Cracker Pizza.  Let's just say, this is one of my favorite and go-to easy meals or snacks depending on the day.
All you need is a tortilla shell, pizza sauce, cheese and some toppings.  Pile them on and bam, you have a super thin and healthier pizza.  It really does feed that pizza craving if you are "trying to be good."
Give it a shot this weekend, I promise, it's a good one.
