Oatmeal Nutella Cookie Cups

Ready to have your mind blown?  Well, here it is folks, the easiest most delicious recipe (per my Sister {in-law} recipe I have made on the blog.  For real, she said the best thing I have ever made.  Emily has tried a lot of recipes I have made for the blog so that either means a. everything else has sucked or b. these are actually that good.  I would like to think the latter.  

Musical Selection: Gloria by: Them  My brother, his two almost two year old twin girls and myself had a jam/dance session to this last night.  It so happens that one of their middle names is Gloria.  
It starts with a package of oatmeal cookie mix. Hence the easy.
Pour it into a bowl and make according to the directions.  Add water
A stick of softened (NOT MELTED-per the directions) butter
And an egg. That's all for the cookie mix.
Easy. Set aside.
Grab some room temp cream cheese.  Okay, if you are going to double this batch, use 1/2 a block--I had wayyy too much filling.
And some nutella.  Ahhhh nutelllaahhh.
Mix it up.  This is why it is easier if you have it at room temp.  I came up with this on a whim so I didn't have it at room temp.  I popped it in the microwave for 30 seconds and stirred it up.  It wasn't too bad but took a bit to get together.  The texture was weird so I crossed my fingers this would work--it did, trust me friends.
Using a cookie scoop (or two spoons) spoon a little cookie dough in each cup.
Flatten with your fingers.  Don't laugh at mine. Clearly not a hand model.
Top with a tablespoon or so of the nutella cream cheese mixture.
And another scoop of cookie dough.
Flatten just a bit with your fingers
And top with a few chocolate chips--I used minis.
Bake for what feels like an eternity.  I took them out wayyyy early and they were really doughy (delicious) but doughy.  I cooked these for 25 minutes but they could have gone a few more.  We like doughy cookies though so it was okay.
Serve warm with cold milk...

Look at that nutella cream cheese ribbon and gooey center.  These are a total winner.

Oatmeal Nutella Cookie Cups 
1 package oatmeal cookie mix + ingredients to make the cookies (for me: water, butter, egg)
1/2 block of cream cheese
1/4 cup nutella
1/2 cup (or so) chocolate chips (I used mini)

Preheat the oven to 350 degrees and line a muffin tin with paper cups.

Combine the ingredients for the oatmeal cookie dough.  Set aside.

Combine the cream cheese and nutella.  Set aside.

In the bottom of each cup, place a cookie scoop (or a few tablespoons) of the cookie dough.  Press it down gently with your fingers or the back of a spoon.  On top of that, scoop a tablespoon or so of the nutella mixture.  Top with an additional scoop of cookie dough and chocolate chips.

Bake for about 25 minutes or until the tops are turning golden brown and the middle is starting to set.  Bake longer if you don't wasn't them as doughy as we like them : )

Enjoy with a cold glass of milk!

  3. IS THIS FOR REAL!!! Ok, I'm a little concerned why you haven't mailed me a few of these, ya know, just to make sure they are safe for you to eat! :)

    1. I could always use another taste tester! Especially since my husband doesn't like chocolate so these are out for him! Too bad I had 12 of these at the house to eat on my own. Luckily my sister (in law) and brother took a few off my hands : )
