Soft Monster Cookies

I know I have posted Monster Cookies before but these cookies, these cookies, let me tell you about these cookies.  They are soft, super peanut buttery and studded with chocolate chips, m&m's and peanut butter chips.  My sister (in-law) asked if I added nuts as well.  That was a big no, but if you are into that sorta cookie kinkery, you sure can.  

These are my new fave. 

Start with butter (I made a double batch)

Brown sugar
White sugar
And give it a good stir to combine.  The recipe said use a stand or hand mixer…I was lazy.
Add the peanut butter 
Stir again
My peanut butter jar clean up crew :)
Add eggs
Stir again
Add vanilla…you guessed it, stir again
Then add the baking soda
Flour
And stir again, just to combine
Then you can add the fun stuff…oats
Mini chocolate chips (or regular, whatever you have on hand)
Peanut butter chips
And m&ms
Give it a good stir. 
Scoop onto a silpat lined cookie sheet.  I honestly don't know if you need a silpat or to spray the baking sheet with cooking spray since there is butter and peanut butter in them.
Smoosh them down just a bit since they don't spread on their own.
Bake and remove from the oven.  Let them cool a little bit on the baking sheet so they set.
Devour. 
If you need me, I will be stuffing my face with these at Scrapbook Camp this weekend.  No, I'm not kidding and yes, I will be posting about it later.

Soft Monster Cookies 

1/2 cup or 1 stick of butter (at room temperature)
1/2 cup brown sugar
1/4 cup white sugar
3/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1 1/4 cups all purpose flour
1/2 cup quick cooking oats
3/4 cup m&ms
1/4 cup chocolate chips
1/4 peanut butter chips 

Preheat the oven to 350 degrees F.  

Start by combining the butter, brown and white sugars in a large bowl using a hand/stand mixer or your own brute strength.  Add the peanut butter, stir again.  Add the egg, stir, vanilla stir.  

Measure in the baking soda and flour and stir just until combined.  Stir in the oats, m&ms, chocolate chips and peanut butter chips.  

Scoop using a cookie scoop or two teaspoons measuring about 2 tablespoons onto a cookie sheet lined with a Silpat mat or sprayed with cooking spray (just in case).  Press down gently as they do not spread on their own.  

Bake for 9-10 minutes but no longer.  You want these to stay soft.  Remove from the oven and let cool on the cookie sheet for 2-3 minutes then move to a cooling rack.  

Enjoy with a big glass of milk!

  8. Whenever i bake cookies or anything i use parchment paper. So much easier to clean up when I am done and you can use them many times if you are making several batches in one day. (Like I do around Christmas time) :)

    1. Hi! Found this recipe on Pinterest and just finished making them a few minutes ago. I followed the recipe exactly (for one batch) and got 19 average sized cookies. I used an ice cream scoop to measure out the dough, and mine are not as thick as the ones in the picture, but I'm telling you the taste is not lacking at all! They're delicious. :)

  20. I took these to a cookout along with another cookie, and these were, by far, the more popular cookie! I love that they stay puffy and soft. The addition of the pb chips is nice too. The recipe I used to use for Monster Cookies had more of an oatmeal consistency, so if you're used to that, just know these are more dough than oats. You can hardly notice the oatmeal. (Might try adding more the next time to see what happens.)

    1. More wet (i.e. butter, peanut butter) = less crumble. Add just enough to make the dough just sticky enough

  28. I made these and they were a little dry. The written recipe calls for one egg, but the picture shows 2. I followed the written recipe and just looked back to see if I missed something. Could you let me know if it is 2 eggs. Thank you!!!

    1. There's two eggs in the picture because she doubled the recipe. Add more butter or peanut butter... or you can try an extra egg.

    1. I'm allergic to peanut but have always wanted monster cookies. I substituted one average size banana for the peanut butter. They turned out really moist (almost too moist, maybe a little more oats next time) but delicious and banana-y! Hope this helps.

    I've been looking for this recipe ever since 1/2 of it showed up on Pinterest! However, I have one question, the recipe calls for 1 stick of butter and 1 egg but the pics show two sticks of butter and 2 eggs? I got to your site from Tasty Kitchen and there were a couple of reviews that the cookies were dry and crumbly. So should I use two sticks and two eggs? These just look fantastic and I can't wait to make them--I'm staring at a bag of M & Ms right now:)

    1. Hi!!! Thanks for your question! Make the cookies as outlined in the recipe. I know that others have mentioned them being crumbly but I never had an issue with that and I have made these several times!!! If you would like to add a little more peanut butter, you could try that, just to be sure.

  36. Im making these now as I type. I used pretzel m&ms and I think next time I will use the minis. But my first batch came out soooo yummy! I also added a few dashes of cinnamon. Which is making my house smell delish! Thank you for this recipe!
