Hot Chocolate Pudding Cookies and an Eggland's best Giveaway!

I was recently approached by Eggland's Best Eggs to create a cookie recipe.  I thought "sure" I would use those "fancy" eggs to whip up some cookies.  After doing a little research, I found out that Eggland's Best Eggs actually have a reason for the "fancy" EB stamped on their shell.  

For starters, they have 25% less saturated fat, 10 times more vitamin E, 4 times more vitamin D and more than double the Omega-3 than ordinary eggs.  Who knew there was such  difference?!  

I can vouch that I did use Eggland's Best Eggs to make these cookies and they are THE BEST cookies I have ever made.  Crisp on the outside, gooey on the inside and they stayed perfectly moist for several days.  I think any chocolate lover would be pleased to see these show up on your cookie plate this holiday season.

To start, add flour
and baking soda into a medium bowl
Whisk together and set aside
In a large bowl, add room temperature butter
Along with brown and
White sugar
Combine using a hand mixer
Pour in a packet of pudding mix.  I used this one
And mix to combine again
Then bread out these bad boys
Yep, that's right, Eggland's Best Eggs.
Crack into the bowl
Pour in a little vanilla
And combine again… nice and fluffy
Pour in the flour and baking soda mixture and combine
Add some chocolate chips
And these awesome mini marshmallows.  These things are ah-mazing.
Scoop out onto your baking sheet and bake for 8-10 minutes.
Serve with a glass of milk for ultimate enjoyment
These are seriously the best cookie I have ever made.  No joke. 
I mean, just look at that gooeyness!

Hot Chocolate Pudding Cookies

2 1/4 cups flour
1 teaspoon baking soda
1 1/2 sticks butter, at room temperature
3/4 cup brown sugar
1/4 cup white sugar
1 3.56 box of Hershey's Special Dark Pudding
2 Eggland's Best Eggs
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
1 cup Mallo Bits

Preheat the oven to 350 degrees

Combine the flour and baking soda in a small bowl.  Whisk together to combine. Set aside.

Cream together the butter and sugars in a large bowl, with a hand mixer.  Add in the pudding mix, mix again.  Add the Eggland's Best Eggs and vanilla mix again, scrape the sides of the bowl.  Slowly add in the flour and baking soda mixture, just until combined.  Add in the chocolate chips and mini marshmallows, stir by hand.

Scoop dough out onto a greased or Silpat mat lined cookie sheet.  Bake for 8-10 minutes.  Let cool for a minute to set and remove to fully cool on a wire rack.

Enjoy with a glass of cold milk!
