
About a month ago my new sweet, sweet, blog friend, Amanda of I am Baker sent out a call for Desserts for the Deserving. I was intrigued. I read on about how bloggers and other kind folks could volunteer to make and send a dessert of their choice to someone who needs a little pep in their step, someone who is going through a hard time and needs a smile. I thought to myself, "Hells yah. I can use my baking skills to actually do something good besides make my waistline grow." I volunteered and two weeks ago shipped out my favorite Monster Cookies to Jonathan in Texas who needed a smile.
I hope these Monster Cookies did the trick. They sure make me smile every time I eat them. Thank you Amanda, Rebecca and Shanna for letting me be apart of the Desserts for the Deserving Movement! I can't wait to do it again next year : )
Start by adding eggs to a large bowlGive them a good stir
Add brown sugar
White sugar
Baking soda
Vanilla
Corn syrup--this is the key to the chewy goodness
Butter
And creamy delicious peanut butter
Stir it up real good until it is combined.
Add oats
Mini M&Ms
And Reese's Pieces
Stir again. This time it is a little more difficult but, hey you are working off the calories you will consume in the 15 cookies you make. Also, I do have to say, there is not any flour in these babies--which basically makes these healthy....basically.
Using a large cookie scoop, scoop out the dough and place on a baking sheet. I also used a silpat on one of the baking sheets and found it is 100% unnecessary. Just an FYI. Bake for about 10-12 minutes or until the edges just start to turn golden brown.
Take a peek over the couch when the cookies are in the oven to see this. All together now "awwwwww..." I know, it kills me.
There they are. Just golden brown around the edges but still kinda doughy in the middle. Let them set for a minute or two before transferring to a cooling rack.
Oh come on, you knew I had to taste them before I sent them off.
These cookies are to die for.

Monster Cookies:
3 eggs
1 1/2 cups packed brown sugar
1 cup white sugar
1 teaspoon vanilla extract
1 teaspoon corn syrup
2 teaspoons baking soda
1/2 cup butter
1 1/2 cup peanut butter
4 1/2 cup rolled oats
1 12 oz bag Mini M&Ms
1 cup Reese's Pieces
Preheat the oven to 350 degrees.
Start by adding the eggs to a large bowl. Beat the eggs. Add the brown sugar, white sugar, vanilla, corn syrup, baking soda, butter and peanut butter. Stir to combine.
Add the rolled oats, Mini M&Ms and Reese's Pieces. Stir to combine--it will be difficult to stir but wooorth it :)
Using a cookie scoop, or two spoons, add the dough to a baking sheet (no need to spray/use a silpat). Make sure to give them a little room as they do spread. Bake for about 10-12 minutes or until the edges start to turn golden brown.
Let the cookies set on the cookie sheet for a few minutes after baking before moving to a cooling rack.
