Kicked Up Eggs in a Hole

Yes, I'm posting about how to make eggs in a hole which is probably the easiest thing on earth to make.  However, I did put a little twist on them that took this eggy treat to a whole new level.  Bring on the cheese and hollandaise sauce! 

These come together in just a few minutes for a quick weekend breakfast.  We are entertaining again this weekend and really looking forward to sharing a nice meal with our family.  Stay tuned for the recipes!

Start by cutting a hole in the middle of a few slices of bread.
Pop them into a pan that has been either sprayed with cooking spray or has a little butter in it.  Don't do what I did and pack them into the pan...you will see why in a second.
Yep, that's why.  The eggs ran under the bread and into the pan.  It was okay.  Mainly my fault since I only like scrambled eggs.  But, it worked out okay.  Just you wait and see.
Here's Mr. Schwartz's up close and personal.  Sprinkle a little salt and pepper on it as well.
All ready for the toppings.  Do you see that runny middle? Gross.
Now that's what I'm talking about.  Add a slice of American cheese or whatever cheese makes your skirt fly up.
Then, the piece de resistance, hollandaise sauce.  I'd like to say I whipped up a batch of homemade, but I totally made this out of one of those packets you can buy at the grocery store.  Let me tell you, it was wonderful. Top with a little parsley and you are good to go.  


Kicked Up Eggs in a Hole 

4 slices of bread
4 eggs
4 slices of American cheese (or cheese of your liking)
Hollandaise sauce packet
Salt and pepper, for seasoning 
Dried parsley, for garnish (if desired)

Start by preheating a large skillet on medium heat.  Spray with cooking spray or melt a little butter in the bottom of the pan.  Cut out a circle in each slice of bread, place the bread into the skillet.  

Add an egg to each hole.  Be sure that the bread is completely flat if you whisk your eggs before adding them.  Sprinkle with salt and pepper.  Cook the eggs for 2 minutes and flip.  Cook for additional two minutes or to your liking. 

While the eggs and toast are cooking, make the hollandaise sauce according to the directions on the packet.  

When the eggs are done, place them on a plate, top with cheese and drizzle with hollandaise sauce.

**note that adding some sliced ham to this would be fantastic as well!**
