Ham and Cheese Melt Deviled Eggs and a Giveaway! {WINNER ANNOUNCED}

Do you love deviled eggs as much as I do?  Well, I stumbled across this recipe from Lauren's Latest right around the time I was approached by MyBlogSpark to do a Land O'Lakes Eggs review and giveaway.  What perfect timing huh?  

I whipped up these deviled eggs in no time and they were quickly devoured by Mr. Schwartz and myself soon after.  They are perfect and not the boring (although wonderful) traditional type.  Read through the post…the giveaway details is at the end.

Okay, does this look weird?  Well, I hate hard boiling eggs.  It's one of my weird kitchen things.  As usual I did some research and seaming eggs is much easier and results in the.perfect.hard.boiled.egg.  Place the eggs in the seamer basket and add some hot water to the bottom of the sauce pan.  Make sure that when the water gets boiling it will not touch the eggs at all…that will result in eggs that burst--not ideal.  Let these steam, burner on high, water boiling, for 17 minutes exactly.  No gray rings on the yolk and perfectly cooked.
While the eggs are steaming chop up one stalk of celery.
And one tablespoon of onion.  My onion was super strong--I would maybe add 1/2 a teaspoon instead of a tablespoon looking back.  The onion over powered things a bit.
You will need a pickle as well.  Oh man, these are my cousin Colin and his lovely wife, Margie's pickles. They are THE best pickles ever.  I promise.  If allowed I will post how to can these perfect pickles later in the summer…pending great weather and a bountiful cucumber harvest at our house.
Dice up one perfect pickle.
Okay, after the 17 minutes, drain the boiling water and pour cold water and add a few ice cubes.  Let this sit for about 5 minutes.
Chop up some ham, add it to the celery, onion, and pickle.
Peel the eggs.  I like to do this under running water.
Slice the eggs up.
Add the yolks to the party.
Smash them with a fork.
Add two large, heaping tablespoons of either mayonnaise or Miracle Whip.  I love Miracle Whip so that is what I used--light none the less.  Gasp.  I know.
Here is my little twist, I added a teaspoon of ground mustard.
A pinch of salt
And black pepper.
Mix it all together.
Because I'm not the "neatest" of deviled egg stuffers, I took the mixture and placed it into a plastic bag.
Cut the corner off and fill away until...
The bag broke.  Blast you store brand zip top bags.  Grrr...
Moving on, once the eggs are refilled, top with a little cheddar cheese.
Like so...
Pop them in the oven under the broiler for about 2 minutes or until the cheese is melted, sprinkle with dill.
Place them on a pretty egg dish.
Take pictures of said eggs on a plate...
And with the eggs on the plate and on the egg plate...
Give in and split the try with your husband.  Amen.

Ham and Cheese Melt Deviled Eggs
6 eggs
1 stalk of celery, finely diced
1/2 teaspoon (or more depending on your taste) onion, very finely diced
1/4 cup ham, in small cubes
1 medium sized dill pickles, diced
1 teaspoon ground mustard
2 heaping tablespoons mayonnaise or Miracle Whip
1/4 teaspoon salt
1/8 teaspoon black pepper
4 tablespoons shredded cheddar cheese
dried dill, for garnish

Start by adding water to the bottom of a sauce pan, add the steamer basket and eggs.  Turn burner on high heat.  Make sure the water will not boil into the steamer basket--that will make the eggs burst.  Steam the eggs for 17 minutes exactly.  Once the eggs are done steaming, pour out the hot water and add cold water and ice to cover the eggs.  Let sit and cool for 5 minutes.

Meanwhile, combine the celery, onion, ham, and pickle.  Peel the eggs, slice in half and add the yolks to the mixture.  Add the mayonnaise/Miracle Whip, salt and pepper.

Take the filling mixture and place it into a sturdy zip top bag.  Zip the bag and cut the corner off of one side.  Use the bag and gently fill the eggs.  Top each egg with cheddar cheese.  Place eggs on a baking sheet and into an oven.  Broil just until the cheese is melted, about 2 minutes.

Top with dill and serve.

  9. I love the idea of steaming eggs. I don't like hardboiled eggs, but my husband does. And they're the one thing I absolutely can not cook properly!

    I'll have to try to steam them! :)
