Strawberry Peach Overnight Oats

Happy National Oatmeal Day!  No, I'm not kidding, Happy National Oatmeal Day!  

A few weeks ago I was approached by Driscoll's to do a post incorporating their berries and oatmeal.  Consider it done.  Here are some fun facts: 

--Oatmeal contains soluble fiber, which reduces low-density lipoproteins
(LDL), or the "bad," cholesterol.

--Five to 10 grams of soluble fiber daily can decrease your total and LDL
cholesterol.

--Eating 1 1/2 cups of cooked oatmeal provides 3g of soluble fiber. If you
add a serving of fruit such as berries, you'll consume five grams of soluble
fiber in one sitting!

--Age-defying antioxidants in berries keep the mind sharp, eyesight keen,
and help to strengthen immunity.

And besides all of that good for you stuff--berries actually taste pretty stinking good.  Yes, I am now a berry liker.  I wouldn't say lover but I'm working on it.  

I have been wanting to try these "overnight oats" that people keep raving about and this was my opportunity.  Although it was interesting to eat cold oatmeal I think I will start making these on the regular.  Super easy to whip up, portable and oh so healthy.  Here is the recipe: 
 Start with these beauts. Give them a good wash, destem and chop.  Set aside for now.
 In a mason jar, pour in the oats
 Milk..yeah I spilled everywhere.
 Greek yogurt…yum.  I used peach yogurt hence the "Strawberry Peach Overnight Oats."
 And strawberries.  How pretty is that?
 Give it a quick stir and into the fridge it goes…overnight.
 The next day take out your oats
 Give it a good stir and you are good to go.

Strawberry Peach Overnight Oats

2/3 cups rolled oats
1/2 cup milk (soy, vanilla, coconut, cow, goat, it's up to you)
1/2 cup Greek yogurt of your liking
1/2 cup Driscoll's strawberries

Start by adding the oats to a mason jar.  Pour in the milk, yogurt and top with strawberries.  Give it a good mix and pop it into the fridge.

The next day take the oats out, stir and enjoy!
