Sloppy Joe Nachos

The other day I was planning on making Sloppy Joe's so I was writing down everything I need.  Meat, ingredients for the sauce, buns, potato chips (essential) pickles (equally essential) and American cheese (no question).  I thought, why wouldn't I just cut out the bun and serve them nacho-style since we eat them with chips anyway.  Um... hello genius.  Yes, I just called myself a genius, you will too once you try these.
 Start by making your favorite Sloppy Joe's.  Here is mine from the archives.
 Once you have the sloppy Joe's mixed up, you will just need to assemble.  Preheat the oven on broil and layer your ridges, did you hear me RIDGES potato chips on a baking sheet.
 Spoon on the hot Sloppy Joe's.  If you are doing this with left overs, you will want to reheat this before assembling.
 Make sure you put a good amount on each chip.
 Next, add a bit of American cheese to each chip.  I looked for block American cheese so I could shred it but my grocery store didn't have it.  American cheese singles worked just fine.
 See?
 Add a pickle to each chip as well.  Into the oven they go for about 2-3 minutes depending on how close your wrack is to the broiler.  Be careful, the edges of the chips turn brown quickly.
 After a few minutes these beauties will be ready to devour.
We could not get enough of these.  
 Let's just say multiple baking sheets were made that day.

Sloppy Joe Nachos 
(this recipe makes enough for two people)

1/3 recipe of your favorite Sloppy Joe's.  Here is mine. 
20 Ruffles potato chips
2 slices of American Cheese
20 pickles

Start by preheating the oven on broil.

In a single layer, place the potato chips on a baking sheet.  Spoon a generous amount of hot Sloppy Joe's on each chip.  Top with cheese and a pickle on each chip.

Bake for 2-3 minutes under the broiler or until the potato chips just start to brown and the cheese is melted.
