Bubble Up Breakfast Bake

On weekends that we are home, Mr. Schwartz and I typically eat a large breakfast later in the day and have a nice dinner.  This Bubble Up Breakfast Bake was the perfect example of this.  I whipped this hardy breakfast up in just a few minutes with what I had on hand.  You can easily do the same with whatever you have on hand.  
For mine, I started with browning up a pound of reduced fat breakfast sausage.  Once it was fully cooked (aka no longer pink in the middle) I drained it on a paper towel lined plate.
Then I cut up a few refrigerated biscuits
And tossed them into a baking dish that I sprayed with cooking spray
Tossed on the cooked sausage
Topped with cheese
And diced green chillis for some spice
Next I cracked a few eggs (6 not 4 as pictured) and seasoned them with salt and pepper.
A splash of milk and give them a good whisk
Pour the egg mixture over everything in the baking dish.  Into a 350 oven it goes for about 30 minutes
Oh yeah, it will come out all gooey and puffy like so.
There is some serious flavor in there
Breakfast perfection.

Bubble Up Breakfast Bake

1 pound of reduced fat breakfast sausage
1 tube of refrigerated biscuits
2 cups shredded cheddar cheese
1 small can of diced green chills
6 eggs
Salt and pepper to season
1/4 cup milk

Start by preheating the oven to 350 degrees.

Add the sausage to a medium skillet on medium high heat.  Cook until no longer pink in the middle.

While cooking the sausage, cut each biscuit into 8 pieces and place in the bottom of a 9x13 baking dish sprayed with cooking spray.  Add the sausage to the pan, on top of the uncooked biscuits.  Sprinkle cheese on top of that, along with the green chillis.

In a separate bowl, whisk together the egg, salt and pepper and milk.  Pour the egg mixture over everything in the baking dish.

Place in the oven for 30 minutes or until a knife comes out clean in the middle of the dish.  Be careful, the cheese might make it seem like it's uncooked egg but it's just cheesy goodness.

Serve with hot sauce and enjoy!

  7. Delicious! I had leftover mild Italian sausage from our homemade pizza last night and had a few caramelized onions left as well. Made this in small soup crocks for myself and my husband. We had a tube of the small buttermilk biscuits on hand so the rest of those we put on a baking sheet and made them at the same time. Used 4 eggs and some shredded co jack cheese with a little sprinkle of red pepper flakes before it went in the oven. Will make this again soon. Thanks

  8. Just made this and the biscuits didn't cook all the way...after baking for 35 min. The cheese was dark, so I had to take it out.

    1. Did you make sure they were in one layer and used a 9"x13" pan? I have made this twice and the biscuits were cooked in 30 minutes.

  11. Made this for breakfast sans diced green chili and substituted with turkey bacon and sweet red, orange, and yellow peppers. Perfection, and enough to feed 2 kids, 3 teenagers, and one hungry hubby!

    1. Hi! You know, to be honest, I don't think it would. However you could cook the sausage the day before and it wouldn't take too long to quickly throw together in the morning. I just don't think the biscuits would do well sitting in the egg mixture over night!

  13. Just made this for breakfast this morning and it was a hit! The biscuits made it a little too heavy and dry at the bottom, so I would probably not do those again, but I did add some potato and bacon to mine and it came out fantastically otherwise! Thanks for the recipe and happy holidays! (:

  14. Be careful, I did the recipe exactly as it says and the biscuits never cooked. I think the biscuits need to be baked before adding other ingredients.

  16. You can absolutely put this together the night before. I added hash browns to the sausage as I was browning it. Just make sure that that the potatoes are cooked most of the way through before adding to the casserole dish. I also added feta cheese. and after pouring the eggs in, added white gravy. It was delicious! I covered with foil baked it for 30 min, then took the foil off and let it go about 10 more. A big hit!

  20. I didn't have a problem with this recipe. The only thing I saw was that my biscuits were cooking faster than the eggs, so I just covered it halfway through with aluminum foil. It turned out perfectly!

  21. Great recipe. I made this today for Christmas breakfast and it was a great success. For those having issues with uncooked biscuits, I think you do need to be sure to use a big enough pan so the biscuits can lay out on a single layer. For me, that was 9 X 13. I also used Trader Joe's Buttermilk biscuits, which I have found work very well in bubble up recipes. I cannot wait to play with this recipe a bit, switching out different meats, etc. I also do think I will try to keep the cheese/egg/milk mix consistent. It's just the right amount here.

  22. This is my sons favorite breakfast. As I type this it's bubbling away in the oven for him and his buddies after a birthday sleepover. Since I make this often I felt it could use an extra egg (total of 7) and I used 1/3 cup milk. It always turns out wonderful.

  24. I've made this 3 times. The first 2 turned out perfectly delicious. Today, somehow layers were created. All the eggs went to and baked on the bottom, then biscuits, sausage and cheese. The taste is there but the texture changed with the eggs. Any idea what would have caused the layers?
